Does Salt Make Water Boil Faster? The Science Says Otherwise

It’s a common kitchen myth: toss a pinch of salt into your pot and the water will boil faster. But science tells a different story. Adding salt to water actually raises its boiling point, meaning it takes longer to reach a boil—not shorter.

When salt is added to water, it disrupts the liquid’s ability to vaporize. Salt ions bind with water molecules, making it harder for them to escape into the air as steam. This phenomenon, known as boiling point elevation, requires the water to reach a higher temperature before it can boil. While the increase is small—typically less than a degree Celsius for typical cooking amounts—it’s enough to slightly delay boiling.

Of course, there are good reasons to season your cooking water. Flavor is the biggest one. But if you’re hoping salt will speed things up, you’ll be waiting just a bit longer. In fact, pure water will always boil faster than salty water under the same conditions.

The idea that salt speeds boiling likely comes from misunderstanding or wishful thinking. After all, you often see bubbles right after adding salt, but that’s not boiling—it’s just the salt particles providing nucleation sites for existing superheated water to rapidly form bubbles. The real boil was already imminent.

So while your pasta or potatoes will taste better with a seasoned pot, don’t count on salt to save time. If anything, it’s a tiny trade-off: a fraction more waiting for a lot more flavor.
