Does Cooking Garlic Destroy Its Health Benefits?

Garlic has long been celebrated not just for its bold flavor, but for its potential health perks—many of which are tied to a powerful compound called allicin. But here’s the catch: allicin doesn’t exist in raw garlic cloves as-is. Instead, it’s formed when garlic is crushed, chopped, or chewed, triggering an enzyme reaction between alliin and alliinase. This chemical duo comes together to create allicin, the substance responsible for garlic’s pungent aroma and many of its medicinal properties.

So what happens when you turn up the heat? Boiling, sautéing, or roasting garlic can significantly reduce or even eliminate allicin. Why? Because the alliinase enzyme that produces allicin is heat-sensitive. Once garlic hits high temperatures—especially in water or oil—this enzyme gets deactivated, stopping allicin formation in its tracks.

That doesn’t mean cooked garlic is useless. While you lose some of the raw punch, cooked garlic still retains other beneficial compounds and antioxidants. In fact, some research suggests that aged garlic or cooked forms may offer different, though milder, health advantages, such as supporting heart health and reducing inflammation.

Want to maximize allicin? Let chopped or crushed raw garlic sit for about 10 minutes before using it. This gives the enzymes time to activate. If you’re adding garlic to a dish, consider including a mix of cooked and raw—say, sautéed cloves for depth and a sprinkle of raw at the end for potency.

In short, boiling does degrade allicin, but garlic remains a valuable kitchen staple—whether raw, roasted, or simmered—just in different ways.
