How Long Does Allicin Last After Crushing Garlic?

Once you crush garlic, a powerful compound called allicin begins to form—but its strength doesn’t last forever. Allicin is responsible for garlic’s pungent aroma, bold flavor, and many of its celebrated health benefits. It’s also a potent antioxidant with proven antibacterial, antiviral, and antifungal properties.

However, allicin is not very stable.

Research shows that once formed, allicin has a half-life of about 2.5 days. This means that within two and a half days of crushing or chopping garlic, half of the allicin content will have degraded. Factors like exposure to air, heat, and light can speed up this breakdown. For example, cooking crushed garlic immediately reduces allicin levels significantly, especially when exposed to high temperatures.

If you're using garlic for its medicinal effects—say, to support immune function or fight off infections—timing matters. To maximize allicin intake, it’s best to consume crushed garlic shortly after preparation. Letting chopped garlic sit for 10 minutes before cooking can actually boost allicin formation by allowing enzymes to fully activate.

Storage also plays a role.

Keeping crushed garlic in oil or at room temperature can slow degradation slightly, but it won’t preserve allicin indefinitely. Even refrigeration only extends its life by a few days. For long-term use, dried garlic powders or aged garlic extracts offer more stability—but they contain little to no allicin, relying instead on other beneficial compounds.

In short: allicin is both powerful and fleeting. To get the most from fresh garlic, use it quickly and raw when possible. That way, you’ll enjoy not just its bold taste, but its full range of natural benefits.
