How Long Does Allicin Really Last in Garlic?

When you chop or crush a garlic clove, something remarkable happens: the enzyme alliinase converts alliin into allicin, the sulfur-rich compound responsible for garlic’s sharp aroma and many of its famed health benefits. But here’s the catch — allicin doesn’t stick around for long.

Once formed, allicin starts breaking down almost immediately. Enzymes within the garlic itself, along with external factors like temperature and pH, determine just how quickly it fades. At room temperature, allicin has a half-life of about 2.5 days. That means after two and a half days, half of it has already degraded. Over time, it transforms into other sulfur compounds, some of which may still offer benefits, but without the same potency.

Heat speeds up this process dramatically. Cooking garlic right after chopping can reduce allicin levels within minutes. That’s why many health-conscious cooks recommend letting chopped garlic sit for 5 to 10 minutes before heating it — this allows allicin to fully form before exposure to heat.

Storage also plays a role. Fresh, raw garlic kept in a cool, dry place retains its potential longer than minced or pureed garlic stored in oil or at room temperature. Even refrigeration only slows the breakdown — it doesn’t stop it.
