When you bite into a clove of raw garlic, you're not just adding flavor—you're releasing allicin, a potent compound known for its antimicrobial and potential health-boosting properties. But exactly how long does allicin linger in your body after consumption?

Despite its biological activity, allicin is remarkably unstable. Once formed in crushed or chewed garlic, it quickly breaks down into a variety of sulfur-containing metabolites. Studies suggest that allicin itself has a very short lifespan in the human body. In fact, no detectable levels of allicin have been found in the blood or urine within 24 hours of eating 25 grams of raw garlic, even when that garlic contains a high initial concentration of the compound.

This doesn’t mean the benefits disappear. While allicin may vanish quickly, its byproducts—such as diallyl sulfides and other organosulfur compounds—remain in circulation longer and are believed to be responsible for many of garlic’s observed health effects. These metabolites can be detected in blood and breath, sometimes contributing to that well-known "garlic breath" long after ingestion.

The exact pathways of absorption and metabolism are still not fully mapped, but it's clear that allicin acts more as a transient precursor than a long-lasting agent. Its transformation begins almost immediately after ingestion, reacting with proteins and other molecules in the digestive tract.

So while allicin itself doesn't stick around, its influence does—in the form of downstream compounds that may support cardiovascular health, immune function, and more. The rapid metabolism of allicin underscores the complex, dynamic nature of how natural substances interact with the human body.
