How to Stabilize Allicin for Longer Shelf Life

Allicin, the powerful compound found in garlic known for its antimicrobial and antioxidant properties, is notoriously unstable. It degrades quickly when exposed to heat, light, and air, making long-term storage a challenge. However, a practical method has emerged to significantly improve its stability.

The process begins by introducing a stabilizer into the allicin solution. Researchers have found that using diallyl trisulfide—a sulfur-containing compound naturally present in garlic—can help preserve allicin’s structure. This mixture forms a more resilient base, reducing degradation over time.

Next, anhydrous ethanol is added to the stabilized solution. This step not only aids in dissolving components evenly but also creates a protective environment that further shields allicin from breakdown. Ethanol acts as both a solvent and a barrier to moisture, which is crucial for maintaining potency.

The final and perhaps most critical step is sealing the mixture in an ampoule bottle. Once sealed, the solution can be stored at room temperature without significant loss of activity.
