Is Acetic Acid Harmful to Humans?

When you drizzle vinegar on a salad or pickle vegetables, you're consuming acetic acid in its most common and harmless form. In fact, the acetic acid in household vinegar typically ranges from 4% to 8% concentration—perfectly safe for consumption and everyday use. This mild acid is a natural byproduct of fermentation and has been part of human diets for centuries.

However, not all forms of acetic acid are created equal. While the diluted version in food poses no threat, higher concentrations found in industrial or laboratory settings can be quite dangerous. Pure or concentrated acetic acid is corrosive and can cause severe irritation to the eyes, skin, and respiratory tract. If it comes into contact with skin for prolonged periods, it may lead to burns or even tissue damage.

Workers handling glacial acetic acid—the concentrated form, which is nearly 100% pure—must follow strict safety protocols. This includes wearing protective gloves, goggles, and working in well-ventilated areas to avoid inhaling vapors, which can irritate the nose, throat, and lungs.

Accidental ingestion of concentrated acetic acid is rare but serious, potentially causing abdominal pain, vomiting, and internal injury. In such cases, immediate medical attention is crucial.

In everyday life, there's little cause for concern. The acetic acid in your kitchen is not just safe—it’s part of what gives many foods their tangy flavor. But as with many chemicals, the dose makes the poison. Respect the concentrated form, and you’ll have no trouble enjoying vinegar’s culinary benefits without risk.
