Sodium Chloride and Baking Soda: Similarities and Differences
At first glance, table salt and baking soda might seem quite similar. Both are white, powdery substances commonly found in kitchen cupboards, and both are classified as salts in chemistry. However, despite these similarities, they are distinct chemical compounds with different compositions and uses.
The primary difference lies in their chemical structure. While both compounds share the same positively charged ion—sodium (Na+)—their negatively charged ions are completely different. Table salt is strictly sodium chloride (NaCl), containing the chloride anion (Cl-). In contrast, baking soda is sodium bicarbonate (NaHCO3), which features the bicarbonate anion (HCO3-).
This difference in chemical makeup changes how they behave. Sodium chloride is primarily used for seasoning and preserving food, whereas sodium bicarbonate acts as a leavening agent in baking. When baking soda reacts with an acid, it releases carbon dioxide gas, causing dough and batter to rise—a property that plain table salt simply does not have.
