Is Boiling Evaporation or Vaporization?

When you watch a pot of water heat up on the stove, you are witnessing a fascinating phase change. The short answer is that boiling is a specific type of vaporization, not evaporation.

To understand the difference, it helps to look at how liquids turn into gases. Vaporization is the broad umbrella term for any process where a liquid transforms into a gas. It happens in two main ways: through evaporation and through boiling.

Evaporation is a quiet, everyday process. It happens only at the surface of a liquid and can occur at any temperature. This is why a puddle slowly disappears on a sunny day even if the water never gets hot enough to bubble.

Boiling, on the other hand, is much more energetic. It happens when a liquid is heated all the way to its boiling point. At this exact temperature, the vapor pressure inside the liquid becomes equal to the atmospheric pressure pressing down on it. Because the pressure forces match, bubbles of vapor can form deeply within the liquid and rise rapidly to the top. This creates the rolling boil you see in the kitchen.

So, while both processes change a liquid into a vapor, evaporation is a slow surface event, whereas boiling is a vigorous, bulk-wide form of vaporization.
