Is Vinegar Inflammatory? The Science Says the Opposite

You might have heard conflicting things about vinegar—especially apple cider vinegar—and how it affects inflammation. But here’s the truth: far from being inflammatory, vinegar may actually help reduce it.

Research suggests that vinegar, particularly its main component acetic acid, has anti-inflammatory properties. Studies have shown that vinegar can lower the levels of key inflammatory markers in the body. For instance, it helps reduce the activity of cytokines—molecules that promote inflammation—and also dampens the expression of enzymes like cyclooxygenase (COX)-2 and inducible nitric oxide synthase (iNOS), both of which are involved in the body’s inflammatory response.

One of the ways vinegar works is by influencing signaling pathways such as the mitogen-activated protein kinases (MAPKs), which play a role in how cells respond to stress and inflammation. By modulating these pathways, vinegar may help keep inflammation in check.

While most of the research has been conducted in animal models or lab settings, the results are promising. In one study, vinegar supplementation led to measurable decreases in nitric oxide (NO) and other biomarkers linked to chronic inflammation—conditions often associated with diseases like arthritis, diabetes, and heart disease.

That said, vinegar isn’t a miracle cure. It should be seen as part of a balanced diet rich in whole foods, vegetables, and healthy fats, all of which support overall inflammatory balance. And if you're considering daily use—especially in concentrated forms—talk to your healthcare provider first, especially if you have gastrointestinal sensitivities or acid reflux.

So, is vinegar inflammatory? The science says no. In fact, it may quietly be one of the kitchen’s most underrated allies in fighting low-grade, chronic inflammation.
