Common Materials That Dissolve in Water

Water is often called the "universal solvent" because it can break down a wide range of substances. Two of the most familiar materials that dissolve in water are salt and sugar.

Salt, or sodium chloride, dissolves easily when stirred into water. This happens because water molecules pull apart the sodium and chloride ions, surrounding them in a process called dissociation. It’s why seawater tastes salty — the ocean is full of dissolved minerals like this.

Sugar, on the other hand, dissolves differently. Whether it’s table sugar (sucrose) or glucose, sugar molecules are pulled into solution by water through hydrogen bonding. You’ve probably seen this every time you stir sugar into your coffee or tea — it vanishes into the liquid, sweetening it evenly.

These aren’t the only substances that dissolve in water. Vinegar, which is acetic acid mixed with water, is another example. But salt and sugar remain the most common in everyday life — from cooking to science experiments in the classroom.

The ability of a substance to dissolve in water depends on its chemical structure. In general, polar substances — those with positive and negative ends — tend to mix well with water’s polar molecules. That’s why salt and sugar, both polar, dissolve so readily.
