What Really Dissolves in Water?

When it comes to mixing food with water, not everything behaves the same way. True dissolution—where a substance breaks down completely at the molecular level—only happens with a few ingredients. The most common? sugar and salt. Drop a spoonful of either into a glass of water, stir, and they vanish into solution, forming what we commonly call sugar water or salt water. This kind of chemical blending is what scientists call "solubility," and it’s limited to certain compounds.

Other foods, like pasta, rice, or vegetables, don’t truly dissolve. Instead, they absorb water, swell, and soften—especially when heated. Think of simmering carrots or soaking beans. While they release flavors and some nutrients into the liquid, they never fully disappear. This process is more about extraction than dissolution, and it’s the foundation of making broths, soups, and stocks.

For example, simmering meat, bones, or vegetables in water pulls out flavors, collagen, and minerals over time, creating a rich, savory liquid. But again, the original ingredients remain visibly intact—even if they’re falling apart. You’re not dissolving them; you’re extracting from them.

So while only sugar and salt dissolve completely in water, almost anything can be soaked or cooked in it to transfer flavor and nutrients. That’s the magic of cooking: even when things don’t technically dissolve, they still transform. Next time you’re making tea, broth, or a simple syrup, remember—true dissolution is rare, but culinary chemistry happens in every pot.
