Water as the Ultimate Solvent

When thinking about chemistry and everyday science,water stands out as the most common and universal solvent on Earth. Because of its unique molecular structure and electrical charge, it is capable of dissolving a wider variety of substances than any other liquid.

To understand how this works, scientists generally divide solvents into two main categories: polar and nonpolar. This classification depends entirely on the solvent's internal charge and structure. Polar solvents, like water, have uneven electrical charges that attract other charged or polar molecules, making them exceptionally good at breaking apart substances such as salts and sugars.

On the other hand, nonpolar solvents interact best with nonpolar substances, following the fundamental chemical rule that "like dissolves like."
