Which Substances Dissolve Completely in Water?
When you stir a spoonful of salt or sugar into a glass of water, they seem to disappear—this is because both are completely soluble in water. That means they dissolve entirely, forming a homogeneous mixture where no particles remain visible or settle at the bottom.
Salt, chemically known as sodium chloride (NaCl), breaks down into sodium and chloride ions when mixed with water. These ions disperse evenly throughout the liquid, making the dissolution nearly instantaneous, especially in warm water. Sugar, or sucrose, is slightly different. It’s a molecular compound that dissolves more slowly than salt, but given enough time and stirring, it also vanishes completely into the solution.
While both substances dissolve fully under normal conditions, their solubility does have limits. For instance, only about 36 grams of salt can dissolve in 100 milliliters of water at room temperature. Sugar, on the other hand, has a much higher solubility—up to around 200 grams per 100 milliliters. This makes sugar more soluble by mass, though both qualify as completely soluble when within these thresholds.
Other common kitchen ingredients, like flour or oil, don’t share this property. They either form suspensions or separate entirely, which is why salt and sugar stand out in their ability to integrate seamlessly into water.
