Why You Can’t Boil an Egg on Top of Mount Everest

Imagine standing at the top of the world—Mount Everest—freezing wind swirling around you, trying to boil a simple egg for breakfast. Sounds easy, right? Well, it’s actually impossible—and the reason is all about air pressure.

At sea level, water boils at 100°C (212°F). That’s hot enough to turn your egg white from gooey to firm and safely cook the yolk. But up on Everest, where the air is much thinner, something changes: water boils at just around 68°C (154°F). That’s because the higher you go, the less air pressure there is pushing down on the water, which makes it easier for bubbles to form and boil—even if the temperature isn’t very high.

So, while the water might be bubbling away like it’s boiling, it’s actually too cool to properly cook an egg. The proteins in the egg need sustained heat above 70°C to set correctly. At 68°C, the egg will just sit in lukewarm water, never turning solid. You might end up with a warm, slimy mess instead of a hard-boiled snack.

It’s a fun reminder that cooking isn’t just about recipes—it’s also about science. And on Everest, Mother Nature sets some strict rules. So if you’re planning a climb, maybe pack some ready-to-eat food instead. Boiling an egg? Save that for when you’re back at base camp—or safely at home.
