Do Onions Contain Allicin?

Yes, onions do contain allicin—but not in the way you might think. While allicin is more famously associated with garlic, it’s also present in onions, though in smaller amounts. Allicin is a sulfur-containing compound that forms when the plant tissue is damaged—like when you chop or crush a clove of garlic or a raw onion. This process activates an enzyme called alliinase, which converts precursor molecules into allicin and other volatile sulfur compounds responsible for the pungent aroma and sharp taste.

Onions (Allium cepa), part of the Amaryllidaceae family, are rich in a range of bioactive compounds beyond just allicin. Among these are quercetin, fisetin, diallyl disulfide, and diallyl trisulfide—all contributing to the vegetable’s health benefits and distinctive flavor. Quercetin, in particular, is a powerful antioxidant more abundant in onions than in many other foods, especially in red or yellow varieties.

It’s important to note that allicin itself is unstable and quickly breaks down into other sulfur compounds.
