Does Roasting Garlic Destroy Allicin?
Garlic is celebrated for its bold flavor and powerful health benefits, largely thanks to a compound called allicin. But what happens when you roast it? The truth is, cooking garlic—especially at high temperatures—can significantly reduce its allicin content.
“You'll get the most benefit from raw garlic,” says Jeffers, a nutrition expert. Allicin is formed when raw garlic is chopped or crushed, activating enzymes that create this potent compound. However, heat deactivates these enzymes, and once temperatures exceed 140 degrees Fahrenheit (60 degrees Celsius), allicin begins to break down rapidly.That means traditional roasting, which often involves temperatures of 350°F or higher, can strip garlic of much of its medicinal punch. The longer and hotter it cooks, the more allicin is lost. But that doesn’t mean you have to give up cooked garlic altogether.
The key is timing. To preserve as much allicin as possible, add garlic to your dish near the end of the cooking process. For example, stir minced garlic into soups, sauces, or sautés in the last one or two minutes of cooking. This way, it retains more of its beneficial properties while still enhancing flavor. Even roasted garlic has its place. While it loses allicin, it develops a rich, sweet, mellow taste that’s delicious in spreads, dressings, or as a topping. Plus, garlic contains other beneficial compounds that are more heat-stable, so it’s still a healthy addition to your diet—even if it’s not raw.In short: for maximum health benefits, use raw or lightly cooked garlic. But don’t rule out roasted—it’s all about balance, flavor, and knowing how to use it wisely.
