How to Remove Allicin from Garlic: A Closer Look

Allicin is the compound in garlic responsible for its strong aroma and many of its health benefits—but not everyone wants that pungent kick. Whether you're looking to reduce odor for culinary or cosmetic reasons, removing allicin from garlic involves disrupting the enzyme reaction that creates it.

One effective method starts with selecting fresh, peeled garlic, which is then cleaned and crushed. This crushing step is crucial—it’s what normally triggers allicin production when the enzyme alliinase reacts with alliin in the garlic cells. However, if you immediately apply heat—such as baking—the enzyme becomes deactivated, significantly reducing allicin formation. This process, often referred to as deodorization, is a key step in milder garlic products.

The next phase involves high-pressure extraction using a mixture of water and oil. This helps separate and dissolve different components of the garlic, allowing the flavorful yet less pungent compounds to be captured while leaving behind much of the reactive chemistry. The digested material is then extruded, effectively separating the liquid from the solids. This yields a garlic extract that maintains flavor and some beneficial properties, but without the intense odor and bite.

Interestingly, this process mirrors techniques used in commercial garlic powder or deodorized garlic supplement production. While raw garlic is prized for its potency, these methods offer a smoother, more palatable alternative—ideal for dietary supplements or dishes where you want flavor without the aftereffects.

So, while you can’t “remove” allicin in the traditional sense once it's formed, manipulating preparation steps—especially heat and extraction—can prevent its formation and deliver a more neutral garlic experience.
