What Makes Things Dissolve in Water?

Water is often called the "universal solvent" because it can dissolve more substances than any other liquid. But not everything dissolves in it—only certain types of molecules do, primarily those that can interact well with water’s unique polar nature.

Polar molecules are among the most common water-soluble substances. Water itself is polar, meaning it has a slight positive charge on one end and a negative on the other. This polarity allows it to attract and surround other polar molecules. A classic example is sugar—whether glucose, fructose, or table sugar (sucrose)—all dissolve readily in water because their molecular structure contains charged regions that bond easily with water molecules.

Another major group of water-soluble compounds is ionic substances, like table salt (sodium chloride). These are made up of positively and negatively charged ions held together by electrostatic forces. When salt is added to water, the polar water molecules pull the ions apart, surrounding each one and allowing the solid to dissolve. This process is essential not just in cooking, but in biological systems—like how our bodies transport electrolytes in the bloodstream.

While substances like sugar and salt dissolve easily, nonpolar materials—such as oils and waxes—don’t mix with water. Without a charge to attract water molecules, they remain separate, forming droplets or layers instead of dissolving.

In everyday life, solubility affects everything from how we brew coffee to how medications are absorbed in the body. Understanding what dissolves in water—and why—helps explain countless natural and industrial processes, all rooted in the simple yet powerful chemistry of polarity and ionic bonds.
