Does Milk or Water Evaporate First?

When it comes to evaporation, water takes the lead—literally. If you place a glass of milk and a glass of water side by side and let them sit, the water will evaporate faster. Why? Because milk isn’t just water—it’s a complex mixture of water, fats, proteins, and sugars. While the liquid portion of milk is mostly water, the other components slow down the overall evaporation process.

When you heat milk—say, on the stove—you’re still primarily evaporating the water content. The fats and proteins don’t vanish into the air; they remain behind, which is why milk can scorch or form a skin when boiled too long. In contrast, pure water evaporates cleanly, molecule by molecule, leaving nothing behind.

This same principle applies when you add milk to tea or coffee. Even though the drink contains milk, evaporation still hinges on the water content. The milk alters the flavor and texture, but it doesn’t change the fact that water is what’s escaping into the air as vapor.

So while both liquids lose moisture over time, water evaporates first because it’s simpler, lighter, and free of the heavier compounds that linger in milk. It’s a small detail, but one that explains why a spilled drop of water dries up faster than a splash of milk on your kitchen counter.
