Why Some Things Don’t Mix with Water

Ever stir sugar into your tea and watch it disappear, but toss in a handful of sand and see it just sink to the bottom? It’s all about chemistry. Water is a polar molecule, which means it’s great at dissolving other polar or ionic substances—like salt or sugar. But not everything plays nice with water.

Sand, plastic, oil, and even soil are classic examples of materials that don’t dissolve in water. Why? Because their molecules are non-polar or hydrophobic—literally “water-fearing.” Sand, mostly made of silica, has a rigid structure that water molecules can’t break apart. Plastic, whether a grocery bag or a bottle, is made of long polymer chains that resist water’s pull entirely. That’s why plastic pollution is such a persistent problem in oceans—it just doesn’t go away.

Oil is another familiar example. Pour it into water, and it forms slick droplets on the surface. Since oil molecules are non-polar, they’re repelled by water’s polarity, causing them to separate. This is also why vinegar—often mistaken as insoluble—is actually quite different. Vinegar, which is acetic acid in water, does dissolve because it’s polar. The original answer likely mixed up vinegar with oil, a common kitchen confusion.

Soil is a bit more complex. While it contains some water-soluble minerals, much of it—like silt, clay, and organic matter—doesn’t truly dissolve. Instead, it may disperse or settle, but never fully integrate like salt does.

In short, if a substance doesn’t play by water’s chemical rules, it stays put. Whether it’s sand on the beach or an oil spill on the surface, these materials remind us that not everything in nature is meant to mix.
