The Hidden Risks in Raw Chicken: What You Need to Know

Chicken is a staple in many kitchens—versatile, affordable, and packed with protein. But behind its everyday appeal lies a hidden danger if not handled properly. Raw chicken can harbor harmful bacteria, even in small amounts, that can lead to serious foodborne illness.

The two most common culprits? Salmonella and Campylobacter. These bacteria naturally live in the intestines of poultry and can easily contaminate meat during processing. While Clostridium perfringens is also a concern, it's Salmonella and Campylobacter that top the list when it comes to chicken-related food poisoning.

Salmonella is widely recognized and responsible for thousands of cases of foodborne illness each year. Symptoms like diarrhea, fever, and abdominal cramps usually appear within 6 to 48 hours after eating contaminated food. Campylobacter, though less talked about, can be just as dangerous—causing similar symptoms, sometimes leading to more severe complications like Guillain-Barré syndrome, a rare neurological disorder.

The good news? These bacteria are easily destroyed by cooking chicken to a safe internal temperature of 165°F (74°C). But the risk doesn’t end at cooking. Cross-contamination is a real threat: juices from raw chicken can spread bacteria to countertops, utensils, and other foods if not handled carefully.

To stay safe, always wash your hands after handling raw poultry, use separate cutting boards, and never rinse raw chicken—doing so can spread bacteria through splashing water. Proper storage and prompt refrigeration also go a long way.

Chicken can still be a healthy choice—just treat it with the caution it deserves. A little care in the kitchen can prevent a lot of trouble later.
